Our team visits local restaurants to try their specialties, chat with the people behind the scenes, and share our experiences with you. This week, we’re kicking things off at El Vaquero, a family-run Mexican restaurant that has been serving delicious dishes to the community for just over a year.
Located in the heart of Riverton, El Vaquero is the brainchild of Pablo and his family. The restaurant has quickly gained a reputation for its fresh ingredients, unique recipes, and warm, welcoming atmosphere. Pablo, a native of Jalisco, Mexico, brings authentic flavors and creative twists to traditional dishes.
What We Tried
Our team had the chance to sample several standout dishes, each offering a unique and flavorful experience:
Enchiladas a la Crema
These shredded beef enchiladas are smothered in a rich, creamy sauce that perfectly balances savory and tangy flavors. The blend of sour cream and spices makes this dish a crowd favorite. Pablo mentioned that his wife got this recipe from friends who got it from some Abuela in the town that they lived in!
Beef Street Tacos
Simple yet packed with flavor, these tacos feature tender beef, fresh cilantro, and a hint of lime. Amanda loves a lighter option for lunch and recommends the beef street tacos. “They’re the perfect balance—flavorful, filling, and just the right size to keep me going through the day without feeling weighed down.”
Enchiladas El Vaquero
A signature creation inspired by Pablo’s roots in Jalisco, this dish features chicken enchiladas topped with a tomato-based sauce that has a surprising Italian flair. The oregano and robust tomato flavor create a fusion that’s unlike anything we’ve tasted at other Mexican restaurants. Will couldn’t stop raving about the Enchiladas El Vaquero, saying, “Tastes like Italy jumped on top of an enchilada and was having a cowboy ride!”
