Among this week’s harvest and artistic finds will be artisan bread, lots and lots of veggies and honey.
Here’s a tasty soup recipe that features many current farmers’ market offerings.
Sausage, Potato, and Beet Green Soup
- 1 pound ground pork
- 2 teaspoons Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon thyme
- 1/4 teaspoon fennel seeds
- 1/4 teaspoon black pepper
- 1/8 teaspoon red pepper flakes
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 pound potatoes, cut in 3/4-inch chunks
- 4 cups chopped beet greens
In a large bowl, combine the ground pork, Italian seasoning, salt, paprika, fennel seeds, black pepper, and red pepper flakes. Heat the olive oil in a large pot over medium heat. Add the pork mixture, onion, and garlic. Cook, stirring frequently until the meat is browned. Pour into a slow cooker.
Stir in the broth, tomatoes with their juices, potatoes and beet greens. Cover and set to low for eight hours. Enjoy.
