(Riverton, WY) – For one night, Riverton Middle School was transformed into a tropical island escape. Thanks to weeks of preparation and teamwork from students and staff, nearly 600 guests were treated to a mini getaway Tuesday evening during the school’s annual Restaurant Night.
From detailed Hawaiian-themed decorations to games and entertainment for all ages, the event offered far more than just a meal. Students took pride in creating an atmosphere that welcomed families and community members into an experience years in the making.
Restaurant Night was once a longtime tradition for Riverton eighth graders, continuing for decades before coming to an end in 2010. After spending 13 years as a fond memory for former students and staff, the event was revived in 2023 through the efforts of Culinary Instructor Karla Kucera, Principal Aziz Waheed and numerous staff members determined to bring the tradition back to life for a new generation.
Months before a single plate is served, Riverton Middle School students begin preparing for Restaurant Night in ways that mirror the real world. The process starts with building resume’s and applying for restaurant positions they hope to earn. Community professionals volunteer their time to conduct mock job interviews, giving students firsthand experience in the hiring process. Some land their dream jobs, while others learn the importance of adapting and contributing wherever they are needed.
From there, weeks of decorating, menu planning and culinary teamwork lead up to one highly anticipated evening. This year’s Hawaiian-themed experience, “Coral Cove,” transported guests to the islands the moment they walked through the doors. Patrons were welcomed with traditional leis, island music filled the room and younger guests had opportunities to win Hawaiian-themed prizes throughout the night.
The menu completed the tropical atmosphere. Guests enjoyed Aloha Crunch Wraps and Pineapple Party Dip as appetizers before choosing from entrees including Huli Huli Sunset Chicken, Pork Paradise Sliders and Tropical Garden Salad. Dessert options featured a Big Kahuna Brownie and Golden Pineapple Bread Pudding, providing a sweet finish to the fun evening.
Beyond the food and decorations, the event also serves a larger purpose. Funds raised during Tuesday’s Restaurant Night will help support and fund the 2027 Riverton Middle School Restaurant Project, ensuring the tradition continues for future students.
