If you’re going to become a Master Griller, you’re going to want to keep your pantry stocked with a few things that you will definitely need to create the perfect summer meal.
#1 – The Spice Must Flow

Salt is a must, as salting your meat is important for sealing in juices. Kosher salt or sea salt is preferred for grilling. And pepper, garlic, plus any type of pre-packaged steak rub (or your own custom rub made from paprika, cayenne, etc) should also be stocked well in your home this summer so you are ready to barbecue at any time.
#2 – Sweet Relief
For some, brown sugar is a staple you can’t be without during barbecue season. Brown sugar is a more than a sweetener, it’s an essential ingredient in most barbecue sauces. Honey and molasses are also great additions to your marinades to cut down on acidity and improve the flavor profile of your meat.

#3 – Oil it up

Instead of oiling your grill this summer, try applying a high smoke point oil or fat directly to the meat. This will keep it from sticking to the grill and from any flare-ups that may occur due to drips. It will also help with distributing any seasoning evenly. Oils like sunflower, peanut, coconut, or avocado are some of the best for grilling.
#4 – Brew the Right Thing
Coffee might seem like a strange way to improve your steak rub, but ground coffee can unlock a toasted, nutty taste when incorporated with other seasonings. Just a teaspoon of coffee grounds in your rub will kick up the flavors, permeating the meat the same way a red wine might. Fresh ground coffee is of course more robust, but pre-ground coffee can work, as well.

#5 – A Bushel of Yum

Apple cider vinegar may be in your pantry already for a number of reasons. Its versatility includes adding a little acidic zing to your marinade. Regular apple juice is another great marinade ingredient, but apple juice itself can be spritzed on your meat while it’s on the grill. It prevents your beef from losing too much moisture, and also helps your seasoning rub infuse while cooking.
