(Riverton, WY) – Folks in Riverton may have noticed the new signage at the business property located at 122 South 2nd Street East (where More Burgers most recently operated from), as Casper favorite/Mexican restaurant Poncho’s is in the process of opening in that location.
County 10 caught up with owner Fernando de la Torre, who confirmed that they hope to be open by the new year as they finish up some of the permit process.
The original location in Casper has been open for 14 years, de la Torre shared, and they went on to open a second location in Casper a little over two years ago.
While one Poncho’s location in Casper operates 24 hours a day, the other is open from 7 AM to 10 PM. To start, the hours/days of operation in Riverton will be from 6 AM to 10 PM on weekdays, and 6 AM to 12 AM on the weekends. de la Torre says they “want to get a feel for how the community reacts to hours” before they decide if they want to expand to 24 hours in Riverton.
de la Torre said his goal is to expand Poncho’s all around the state in the future, but they started with the Riverton location because “they’ve had people ask to open one here,” and there was a “great opportunity with the building.”
He went on to share that they look forward to expanding to Fremont County “because they have had a great experience with opening their second location,” and that they “are excited to bring great food to more locations and serve the community.”
