(Riverton, WY) – A ribbon-cutting ceremony was held Saturday for Spud Man, celebrating the local restaurant’s move to its new location at 702. E Main St. in Riverton. Owner Jim Brady said the move was driven by the desire to grow his business and take advantage of a new space that allowed for expanded cooking capabilities.
The building, which was previously a sandwich and salad shop, had been fully renovated in recent years, allowing Spud Man an easy transition into the new space. The new location includes upgraded kitchen equipment and proper ventilation, significantly improving cooking efficiency and giving Brady the option to expand his menu.
“At the old spot, it could take nearly two hours to cook potatoes,” Brady said. “Here they’re doing it in about an hour and fifteen minutes.”
Brady, who has more than 50 years of cooking experience, previously worked as the food and beverage director at the Riverton Holiday Inn, said the concept was inspired by the popularity of potatoes in the area and a viral “Spud Man” vendor in England he’d seen on TikTok.
Spud Man is currently open Monday through Saturday from 11 a.m. to 7 p.m. with plans to potentially add breakfast hours in the near future.
